Spring Green Soup

Do you have freezer full of frozen veggies? ๐ŸƒTry this recipe for a smooth flavorful Spring Green Soup!

1 Tablespoon of Coconut Oil 

2 cloves of garlic

1 medium onion

1 teaspoon of curry powder

1/2 Teaspoon of Thyme

2 Cups of Cauliflower Florets 

2 Cups of Broccoli, Asparagus or Peas

3 Stalks of Celery, sliced

1 Cup of Garbanzo or Cannellini beans

5 Cups of Vegetable Broth

2 Cups of Spinach

Salt and pepper to taste

Heat coconut oil in a large soup pot, then add garlic and onion. Cook until onion is translucent. Stir in the spices, veggies, and broth, increase the heat, bring to a light boil. Turn heat to medium and cook for 8-10 minutes or until veggies are soft. Add the spinach and cook another minute or so. Transfer soup to a large blender and process until smooth. This can be done in batches if your blender is small. Pour soup back into pot and season with salt and pepper. Serve in bowls with lemon wedges.
