Easy Three Bean Chili

Three Bean Chili

1 Tablespoon of Avocado Oil

1 Onion Chopped

3 Garlic Cloves

2 Carrots Chopped

2 1/2 Vegetable Broth

1 Cup Cooked Chickpeas

1 Cup Kidney beans

1 Cup Black beans

1 Cup Tomato puree

2 Teaspoons Chili Powder

1 Teaspoon Oregano

1/2 Teaspoon Salt

Sautee onions, garlic, and carrots in avocado oil in a soup pot for 3-5 min. Add veggie broth and all other ingredients, and bring to a simmer, then reduce heat to medium low.

Allow to simmer for 15 min, stirring occasionally. Serve in bowls with avocado on top.
