Mini Strawberry Peach Crumble Pies

One of my favorite things about summer is the abundance of fresh fruit! Every summer, me and my family head to Lyman Orchards for ‘Pick your Own’ season. Each month offers a different fruit; Strawberries in June, Blueberries in July, Peaches, Apples, and Pears in August and September. Last month we loaded up on Strawberries. We froze most of them for smoothies but we also made these delicious Strawberry Peach Crumble Pies! Here is the recipe!

                             

FILLING

1 1/4 Cup on Diced Strawberries 

1 1/4 Cup on Diced Peaches

1/3 Cup of Agave Nectar

1 TB of Lemon Juice 

CRUMBLE

1/3 Cup Flour

1/3 Cup Rolled Oats

1/4 Cup Coconut Sugar

6 TB Earth Balance, Melted 

1 T of Vanilla Extract 

Pre-heat oven to 350. Combine all Filing ingredients in a bowl and set aside. In another bowl mix all Crumble ingredients to coat with earth balance. Distribute fruit between four mini pie pans and top with crumble. Bake for 15-20 min. Allow to cool for several minutes then top with Coconut cream or a vanilla non-dairy dessert. Enjoy!
