Mac' No Cheeze Sauce
1 Cup Peeled, Diced Potatoes
1/4 Cup Peeled, Diced Carrots
1 Cup Water
1/3 Cup Raw Cashews, soaked for minimum 4 hrs
1 Tbs Miso
1 Tbs Tahini
1 Tbs Lemon Juice
1/2 tsp Dijon Mustard
1/3 Cup Earth Balance Margarine
1/3 Cup Nutritional Yeast
1 to 1 1/2 tsp Salt
Black Pepper to taste
Paprika for sprinkling
Place potatoes and carrots in a saucepan with the water and boil until they are soft. Add a little more water if needed. Place the cooked potatoes and carrots in a blender along with all other ingredients and process until smooth. Pour over cooked macaroni noodles. Option to serve and for a thicker dish, bake at 350 for 20 min.
