Homemade Granola
These days a decent bag of granola at the supermarket is expensive and too sweet! With a price tag of about five or six bucks, cane juice always seems to be the second ingredient with half a cup having 15-20 grams of sugar. Not the way I want to start my morning! So since it has also been a slight challenge to find a blend that has all my favorite nuts and seeds, I have happily started to make my own. Good news: making granola just the way your heart desires, at home, really is as easy as 1-2-3!
Cinnamon Vanilla Granola with Cashews, Chia, Coconut, & Raisins
Here is all you need to soon be crunching on your very own customized granola:
2 Cups Rolled Oats
3/4 Cup of Nuts and Seeds Galore! (almonds, cashews, pumpkin seeds, chia, flax, buckwheat, etc.)
Extras (shredded coconut, dried fruit, spices, and extracts)
3 Tablespoons coconut oil
3 Tablespoons Natural Sweetener (maple syrup or honey)
Heat the oven to 350. Mix all the dry stuff in a bowl. Combine oil, extracts, spices, and sweetener together and then add to the dry stuff and mix. Spread out evenly onto a baking pan at bake for about 10-15 min stirring once or twice. Once cooled add dried fruit or chocolate chips and store in an air tight container.
*For the above recipe, I used 1/2 teaspoon of vanilla and cinnamon.
