African Peanut Soup

African Peanut

1 Small Onion

2 Cloves Garlic

2 Teaspoons Coriander

2 Teaspoon Paprika

1 1/2 Cups Cooked Chickpeas

2 Cups of Spinach

1 1/2 Cups Tomato Puree

 2 Cups of Vegetable Broth

1/2 Teaspoon Salt

Blend vegetable broth and peanut butter in a blender. Set aside. In a soup pot, heat oil, and then add onions and garlic. Cook until onions are translucent. Add in coriander, paprika and salt. Stir about a minute until fragrant. Pour in peanut butter mixture, chickpeas, and tomato puree. Cook on medium heat for 5 minutes stirring several times. Add in the spinach and cook until wilted. Serves four generously.
