Strawberry Shortcakes

Who loves Strawberry Shortcakes!? ๐Ÿ“ Iโ€™ve been taking full advantage of berry season and making all of our favorite summer treats. This shortcake recipe is so easy and they are just divine!! 

2 cups Sliced Strawberries
3 Tablespoons Agave Nectar
2 Tablespoons lemon juice

Shortcake Biscuits

1 1/4 Cups Flour
1 Teaspoon Baking Powder
1/2 Teaspoon Baking Soda
1/4 Teaspoon Salt
2 Tablespoons Earth Balance
1 6-oz. Vanilla Coconut Yogurt

Filling: Combine cut strawberries, agave, and lemon juice. Set aside.

Shortcakes: Preheat oven to 450ยฐF. Stir together flour, baking powder, baking soda, and salt in bowl. Rub Earth Balance into flour mixture with hands until it resembles cornmeal. Add yogurt until soft dough forms. Form 8 biscuits with your hands and place on greased cookie sheet. Bake for 8-10 minutes. To serve, slice biscuits lengthwise and top with strawberries and with Vanilla Ice Cream!
